We had good times down the quay in our youth & one of my many fond memories was working with Eileen in the Asgard on the pub grub, Irish Stew, Lemon Cheese cake & watching the Lobsters delivered in from the bay, I a teenager working my first summer job, it was a world of adventure & we just laughed and had the craic and little did we know then, we were building our careers & future.

I had the honour of working with her in Quay Cottage as a young trainee chef, and she played a significant role in shaping the chef, and person I became. Her standards, kindness, and dedication left a lasting mark on me.
I will always remember her not only for what she taught me, but for her wonderful sense of humour, her infectious laugh, and her great ability to have the craic, she brought warmth and light everywhere she went. I will remember her with deep gratitude.
Heaven has gained another angel. May her gentle soul rest in eternal peace.

I knew Eileen in Network Mayo many years ago. She was a very vivacious person. So full of energy and life. We have not met for many years now and I am so saddened to hear this news. My deepest condolences to her family and extended family.
